Recipe: The Elvis?

Upon perusing facebook news feed, i came across the following status update: "okay this might sound weird.... but Im trying my 1st ever peanut butter & bacon sandwhich (on toasted whole wheat)...and as weird as it sounds... THIS SHIT IS SOOO FUCKIN GOOODD!!!!"

then someone commented: "put some bananas on that bad boy with the bacon and grill it like grilled cheese. That's called an 'Elvis.'"

I will be making my own Elvis very very soon.

Recipe: Bacon Fried Rice

Last Sunday, my friend M calls me while walking to the drug store to procure drugs for her recently injured toe. This is how part of our conversation went down (not verbatim as I just don't have a memory like that):

M: I need to eat something before I take drugs.
Me: Ya, that wouldn't be pretty.
M: Bacon Fried Rice?
Me: What?!
M: I'm walking by a place that has a sign saying bacon fried rice.
Me: That sounds amazing and is so freaking obvious. Why didn't any one think of this sooner!?
M: I don't know. But i'm going to try it.
Me: Uh, you better. Take a picture of it.
M: I have to get off the phone to do that.
Me: Do it.
[time lapse]
Me: How is it?
M: So good. I should get off the phone.
Me: Do that. I think i'm going to make my own bacon fried rice.

Jessica's semi-homemade Duck Bacon Fried Rice:

1. Call local thai place (in my case, AM Thai on McDonald Ave in Kensington) and order plain thai fried rice. The woman on the phone will say a bunch of stuff you will not understand. Just say yes after every pause and hope for the best. Did you really expect me to make my own fried rice on a Sunday morning?

2. While waiting for delivery, take four strips of D'artagnan Duck Bacon and trim the fat. (Just my personal preference at the time. By all means, leave the fat for extra flavor) Place in large seasoned cast iron skillet on low heat. Duck bacon does not take long at all to cook and should not be cooked any longer than 1 minute per side. Others would say 30 seconds but I don't find much of a difference if its cooked longer.

3. Also while waiting, fry two eggs in a a separate, small skillet. Season any way you like. I always use salt and red pepper flakes.

4. Once bacon is done, cut into small chunks and add with fried rice to same skillet. Stir it up!

5. Place Duck Bacon Fried Rice concoction into bowl with fried eggs on top and Viola!

Its that easy. My brunch table will see this meal many more times.

Every one must have a bacon genie!

For my first post, I decided that it is appropriate to scream about the Bacon Genie. For $9.99, you too can have 12 strips of perfectly cooked (non greasy) bacon with each push of the microwave start button. This would make the perfect gift for your bacon-drooling-foodie friend (because every one is a self-proclaimed foodie these days, myself included).
